The Coffee: A single varietal, honey processed Bourbon, this microlot coffee is roasted on the light side of medium to highlight its origin and natural sweetness. We note milk chocolate, honey, stonefruit-in the range of cherry juice and plum jam-and it all rounds out with a pleasant tart finish of pomegranate. With a medium weight for body and its mild acidity this coffee is a crowd pleaser. The Bourbon varietal is probably the backbone to most specialty grade coffees and tends to do great in all brew formats, especially that of espresso.
The Producer: Single origin, single source, single varietal and honey processed by Finca Santa Matilde. A fifth generation coffee farm from producers, the Ariz-Herrera family. They were one of the first farms in the Concepción de Ataco region of Apaneca to grow specialty coffee beginning in 1875. Fast forward to today where they have won numerous awards for their coffee including Cup of Excellence El Salvador in 2018 & 2019.
