The Coffee: A grade 1 certified organic coffee, this community lot of smallholder farms come from the highlands of northern Peru. Roasted light medium, this coffee produces a very sweet cup that's nutty and smooth with medium weight to the body while finishing with moderate acidity. We note marzipan, milk chocolate and praline, but can find hints of root beer and brown spice too. This coffee brews great in all formats, however if you're looking for texture and a bit more body we love this cup in direct immersion formats (french press/siphon pot) and exrtracted under pressure (espresso and moka pot. For a cleaner cup, without sacrificing too much body; pour over, drip and aeropress work great too.
The Producer: This community lot of certified organic farmers comes from the Jaén region where farming and sustainability co-exist to create some of the country's finest arabica. Organic farming here encompasses composting, manual weeding, shade and canopy management, and the use of natural pest control methods known as integrated pest management. Earning this regions Protected Designation of Origin for its consistent production of specialty grade arabica that's known for clarity and exceptional quality.
