The Coffee: A microlot of a single varietal, Pink Bourbon, that is roasted light medium. Coffee is intense, heavy and fruit-forward with sweetness on the approach finishing with wine-like acidity. This coffee underwent a "slow dry" natural process that must be maintained by a very watchful eye. The results were incredible and remind us of an extended anaerobic fermented coffee. Tasting notes are dominated by goji berries and blackberry moonshine but we also find cola, florals, and hints of rosemary too. A boozy and complex cup we love in lower temperature pour over, aeropress, and chemex brewers.

The Producer: Camilo Enciso, farmer/producer and owner of El Triunfo, a 10-hectare farm located at  1,850–1,950 meters above sea level in Tolima, Colombia. Under Camilo’s watchful eye the farm focuses on growing small, highly controlled lots of award-winning varietals from beginning to end.  The careful selection and manual harvesting combined with a keen eye on innovation result in coffees with tons of character, clarity and structure all the way through the cup.
