The Coffee: A velvety and sweet cup with a fruit-forward profile, this coffee exhibits all the traits we have come to love about a natural processed coffee from Guji, Ethiopia. A medium roasted coffee that has a lot of room for modulating the cup based on brew temps and grind. Direct immersion formats (french press/siphon pot) highlight fudgey notes and a creamy texture with a heavier body. Pour over and drip formats can make way for a wider range of notes, with lower temps and smaller bypass dosing for a balanced cup with mild acidity. While higher temps and larger bypass dosing create a coffee with medium weight to the body and with a winey acidity on the finish. Espresso is a great option too with a pop of black cherry that holds up to milk.
The Producer: Goro Muda Lot #1 Natural comes from Haro Wachu kebele in Guji. Farmers here are part of the Oromo ethnic group, known for their ancestral customs that are centered around coffee farming. Their techniques include intercropping of subsistence plants that create shade for rows of coffee trees. Local farmers move their coffee from farms to the collection center using horses, mules, or donkeys. What used to be a short rainy season now lasts nearly year-round due to climate change. This makes all forms of labor more difficult, especially during the harvest season, where natural processed coffees require well thought out planning and execution of natural processed coffees.
