The Coffee: A single varietal, Catuaí roasted on the light side of medium. This coffee carries a clean delivery in a sweet cup with a profile that has clarity. We note cola, raisin and nuttiness with a crisp uplifting finish. The body is medium in weight with a silky texture while finishing with pleasant acidity that pairs nicely with its natural sweetness. We find this coffee appropriate for all brewing formats, with our favorites being pour over and espresso.
The Producer: This microlot, single varietal coffee comes to us from Finca Rosita, a family operated farm in the town of Illimani located in the Caranavi region of Bolivia. Their farm, named after the matriarch of the family, Rosa Armayo lies on 32 hectares of land dedicated to coffee production. Lots consisting of Gesha, Java and Catuaí are grown here where they undergo a washed process. This particular microlot consists of Catuaí, a specialty grade varietal known for high cup quality and reliable prodcution.
