The Coffee:
We get strong punchy cups that excels in all formats, from pourover to espresso this coffee is a winner! This lot was prepared using the natural process. Ripe cherries are selectively handpicked and dried in the sun with the fruit intact. This method allows sugars and mucilage to impart sweetness and depth. At Don José, natural coffees are turned frequently to promote uniform drying and to avoid defects. The result is a vibrant coffee with fruit-forward intensity, layered sweetness, and a velvety body, accentuated by the elegance of the Java variety.
This micro-lot is composed entirely of Java, a variety originally from Ethiopia that spread to Indonesia before being introduced to Latin America. Java has found a welcoming home in Costa Rica’s high-altitude regions, where it expresses delicate, elegant flavors with smooth sweetness and complex aromatics. Though not widely planted, Java is prized for its cup quality, offering refined structure and balance that stand out in specialty micro-lots.
