The Coffee: A washed coffee from Chiapas, Mexico this light roast speaks volumes to the beautiful coffees coming from this region. This offering brews up a sweet milk chocolate front of the cup, then rounded out with a touch of complexity and very soft acidity. The complexity of the cup comes from its florals and plum notes in the middle of the cup, while being smoothed over with a touch of nuttiness. A highly versatile coffee we have enjoyed it brewed in all formats and especially when rested and pulled as an espresso.
The Producer: We love small farmers. Coming from second-generation coffee farmer is Mario Santiz Lopez, owner of Finca Villa Hermosa. A small 5 acre farm in the Altos region of Chiapas. Once underrated, this region has really come on as of late and is slowly coming out of its leaf rust epidemic that began in the early 2000s. The Lopez family was not immune and in 2012 watched their farm get wiped out. With the help of funding and programs geared to helped this region through the leaf rust, they were able to renovate and recover two hectares. We are sure glad they did, Marios coffee is cut above and his attention at the farm is exemplified in the cup.
