The Coffee: A single varietal, Arara, this microlot coffee is roasted medium. The coffees overall profile is a classic cup of Brazil, sweet and low acidity with smooth texture and easy going finish. We note brown sugar, dark chocolate, almond, and dates (dark fruit/muted fruit more prominent in espresso and french press). The body of the cup is medium in weight and has a texture that is silky and is an overall clean cup making this coffee appropriate for all brewing formats from drip/pour over to espresso.
The Producer: This single varietal, microlot coffee comes to us from José Serra Neto, fourth generation farmer at Fazenda Morro Alto in Cerrado Mineiro, Brazil. Upon the passing of his father, Mr. Neto took the helm and brought his family's farm into a modern era of farming including advanced machinery, farm certifications to exhibit their families commitment to sustainable environmental practices, and the propagation of the varietal Arara. This particular varietal exhibits high cup quality, great production and most importantly a resistance to Coffee Leaf Rust, eliminating the need for chemical fungicides.
