The Coffee: A full, heavy bodied Washed Process Peaberry from the north of Brazil. This coffee is impeccably sorted and graded. Roasted on the light side of medium this PB is extremely smooth and sweet with notes of candied fig, raisin, dark chocolate, granola and finishes thick and syrupy. Brews great in all formats. The espresso is very approachable young and with little rest. We find it pulls a viscous shot with a nice bright pop to balance it out. Also worth noting this coffee presents more of its candied fig/raisin notes with a bit of granola when brewed in drip/pour over or in direct immersion (french press/siphon pot) formats.
The Producer: This lot of coffee comes from the hands of various smallholder lots in the north of Brazil where they selectively hand pick Yellow and Red Catuai. After which this coffee undergoes a washed process to extract the Peaberry's. After which they are sorted, graded, and screened. Selectively harvesting and handpicking throughout a long harvest season is not at all common to Brazil anymore, where mechanized harvest is the norm. This is a rarity for this Origin and its quality shows in this lot.
